First of all, coffee is a crop. It comes from a tree or bush in the ground, and it has a life cycle: it grows, peaks, matures and declines. When the crop is gone, it is gone for good. No two crops are exactly alike although generalities do persevere year after year.
There are two main species of coffee trees: Arabica and Robusta. Arabica trees produce less coffee per tree than Robusta and they require more attention; that equates to higher prices. They also produce the more flavorful beans and are known as specialty coffees. .
Robusta is a high-yield, low maintenance tree that produces beans with little flavor and lots of caffeine, much more than Arabica varieties. They are used primarily as inexpensive fillers in commercial coffee, sold to soft drink bottlers as a caffeine source, and used sparingly in many peoples' Espresso blends.

Coffee grows on trees in the tropics. With rare exception, coffee is grown between the Tropic of Cancer and the Tropic of Capricorn. There are many factors that impact the flavor of each crop. Most are typical agricultural stuff like soil condition, sunshine and precipitation. Other factors are the amount of shade the trees have: more shade means slower ripening process means more qualities are drawn from the soil and the air.
So here at SCRIPTURE COFFEE we select only the highest quality Arabica varieties, and roast them daily so you the customer will find this the best cup of coffee you ever had.

All of our coffee, the un-roasted green & roasted are " Specialty Grade Beans". Specialty Grade is the highest quality coffee available on the commercial market. All shipments are cupped and checked for quality at the wholesalers warehouse, and again are checked by us to make sure they meet our high quality standard, any coffee not passing our quality check is sent back to the supplier. We are very careful to select only the best of those available coffees, this is why our selections change from time to time.

OUR VS. THEIRS Freshness is probably the most misunderstood factor about coffee. The date of the roast is the key to freshness. Without sophisticated packaging, coffee beans lose more than half of their flavor within two weeks. After six weeks the oils become rancid. Exposure to air and moisture accelerates the decomposition of the flavors. Freezing the beans may stop this decomposition but freezing also destroys the delicate oils and aromatics. Never freeze a quality fresh roasted coffee. Now this is the best scenerio for bean coffee. Most 'specialized' coffee bought in bins at large stores are already stale and have lost most of their flavor, and have picked up some undesirable tastes. This scenerio is for beans that have been roasted. After the beans have been ground, they deteriorate even faster. The shelf life for ground coffee is hours and days.

COFFEE IS AND HAS BEEN A PASSION OF HIS FOR YEARS. TO SEARCH FOR AND STUDY THE PERFECT COFFEE HAS BROUGHT HIM TO THIS COMPANY. WITH HIS CHRISTIAN BACKGROUND, HE GOT ON HIS KNEES MANY, MANY TIMES AND PRAYED TO GOD FOR ASSISTANCE AND GUIDANCE. THE AREA

The captivating Jersey County lies Northeast of where the great Mississippi and Illinois Rivers meet. The former home of the Kickapoo, Menomini, Potawatomi, and Illini Indians was first discovered by the Europeans, Father Marquette and Louis Jolliet, in 1673. They discovered an area rich in foliage and full of wild game, rivers abundant with a pleasing variety of fish, and fertile land that was ready to be cleared and planted.
Jersey County was named after the state from which many of the early settlers emigrated- New Jersey. The area quickly evolved into small agricultural communities. As the area soon began to flourish, a county government was established and a courthouse built in Jerseyville, the county seat. The present courthouse is an magnificent architectural structure that was built in 1894.
Today, the county maintains its agricultural base, yet it also features progressive and picturesque communities and breathtaking tourist attractions. Present day Jersey County, a perfect blend of history and progress, is the proud home of over 20,000 people.
